No compromises with quality
Even before the raw materials arrive at our Schlossbrauerei we attach special importance to quality. Seven basic principles characterise the taste of our specialities:

1. Our brewing water
We draw the outstanding brewing water in Hohenthann from a well with a depth of 110 metres. Water is the main raw material of any beer and therefore receives special attention.
2. Local raw materials
“Hops and malt for beer, may God preserve them here!” The importance of these raw materials has always been known. As one of the few breweries we attach special importance to the fact that the malt house’s brewing barley as well as the hops still come from Bavaria. We exclusively utilise aroma hops from traditional varieties of hops for the taste of our specialities.
3. Brewing process
We preserve the old Bavarian tradition of the single-step and double-step mash process. This variation takes a bit longer in comparison with modern processes, but a good beer simply requires time so that the typical beer taste can emerge.
4. Traditional fermentation
Yeast is of great importance for the character of the beer. We cultivate our brewer’s yeast ourselves as pure-culture yeast. The Hohenthanner yeast strain is specifically deposited in a special “yeast bank” in Weihenstephan. Our yeast is then very cautiously employed in the course of “classical fermentation”. This entails gentle handling that enhances the taste.
5. Matured storage
Our Hohenthanner matures at least 6 weeks in our beer cellars. We are convinced that the genuinely good taste of Bavarian beer needs this long storage time. Try it!
6. No compromises with quality
The Family Rauchenecker personally guarantees that the Hohenthanner beer specialities are natural. Thanks to the gentle filtration, valuable ingredients in the beer are preserved, which distinguishes the wholesome quality. Many official quality awards validate the path we have taken.
7. Short distribution channels
“From Hohenthann – for Hohenthann!” As a typical regional brewery, our customer focus lies on an area about 60 km around the brewery’s smokestack. As a result, the short distribution channels are environmentally-friendly and guarantee the freshness of Hohenthanner specialities. Cheers, to your health!
